    Akpu (Fermented Cassava Fufu)

Akpu, also known as fufu, is a traditional Igbo swallow made from fermented cassava. It is smooth, soft, and stretchy, and pairs beautifully with Nigerian soups such as ofe nsala (white soup), oha soup, and egusi soup.

    Ingredients

    • 2 cups akpu / fufu flour (or prepared wet akpu)
    • 3 to 4 cups water

    How to Make Akpu

Step 1: Bring water to a boil in a heavy pot.

Step 2: Reduce heat to medium-low.

Step 3: Gradually sprinkle akpu flour into the water while stirring continuously.

Step 4: Stir until thick, smooth, and lump-free, adding more water if needed.

Step 5: Cover and steam for 3 to 5 minutes.

Step 6: Stir once more, shape into balls, and serve hot with your favorite soup.

Akpu is a comforting, traditional Nigerian swallow that pairs perfectly with rich, well-seasoned soups. It is easy to prepare with fufu flour at home.
